Mediterranean Watermelon Salad
I have been a fan of Chef Nigella Lawson for years and have all of her cookbooks. This watermelon salad recipe has been a favorite of our family for many summer holidays over the years. Combining onions with watermelon, feta, and olives may sound like quite the odd combination but I think you will be pleasantly surprised. It is both sweet and a savory and is an exciting treat for the taste buds!
Use organic ingredients whenever possible.
Mediterranean Watermelon Salad
adapted from Nigella Lawson’s recipe in “Forever Summer”
1 watermelon cut into somewhat bite-sized triangles
1 can or jar pitted black olives
1 small red onion sliced very thin
juice of 3-4 limes
2-3 TBS extra virgin olive oil
a hunk of feta cheese, cut into bite-sized pieces
fresh mint, chopped
dried mint-optional
fresh flat-leaf parsley
freshly ground black pepper
Method:
Place lime juice and sliced onions in a small bowl to macerate and set aside.
Place watermelon, olive oil, olives, feta, mint and parsley in a large bowl and toss very gently. Add onions with the lime juice they are sitting in.
Sprinkle with a little black pepper and some dried mint if desired and serve.
Your mouth will thank you! Trust me!
